Hey friends,
Since featuring Pizza Waffles and Baked Tacos in my Instagram Stories as I was quickly preparing my family dinner, I’ve had several requests for recipes. Let me tell you a few things:
| 1 | I can barely call these recipes.
| 2 | I am not a food blogger + don’t have any wonderful photography prepared of these actually very delicious meal options.
| 3 | These are actually crowd pleasers. They are SO simple to make and your kids will actually eat them.
| 4 | We don’t follow any specific diets in our household — we aren’t grain free, dairy free, nut free, etc. We consume in moderation! (Click here to read what my Registered Dietician friend, Calli, shared about consuming a balanced diet.) And since our children have become more selective about what they like as they grow up a bit, I try to make meals fun + interesting to get them to try new things or at the very least, eat what I make.
Also note: these meals are paired with servings of fruits and vegetables.
PIZZA WAFFLES
Ingredients:
- Kodiak Cakes protein pancake + waffle mix
- Pizza sauce
- Shredded cheese
- Additional pizza toppings of your liking!
Directions:
- Preheat oven to Broil.
- Prepare Kodiak Cakes according to box waffle recipe
- We have a waffle maker similar to this one and love it. Use it regularly!
- Let waffles cool slightly.
- Top with sauce, cheese + any additional toppings of your desire.
- Broil for 5-7 minutes or until cheese is golden.
- ENJOY — See, told you it was ridiculously simple.
BAKED TACOS
Ingredients:
- 1 lb. taco meat w. seasoning
- Shredded cheese
- 1 package crescent rolls
- Toppings as desired: guacamole, sour cream, salsa
Directions:
- Preheat oven according to crescent roll directions. (350 degrees)
- Cook + season your taco meat.
Note: We use ground beef or ground turkey. - Unroll crescent roll dough onto cookie sheet.
- Scoop a large spoonful of seasoned taco meat onto each flattened crescent roll dough (triangle shape).
Note: I let meat cool slightly first or the bottom of the bakes will be slightly soft. - Sprinkle each generously with cheese.
- Stretch dough to wrap the ingredients inside. Not all sides will be covered, but make the points touch on the top to stick together.
- Bake according to crescent roll directions, or until golden brown.
- ENJOY – Serve with toppings as desired!

I really do like to cook + bake. I just think I’m in a season of busy, or maybe I should just call it full hands, so I do the best I can to make things delicious with a balance of healthy.
